Guinness Braised Short Ribs

  • Arlington Tavern was a great Santa Barbara restaurant and supporter of Zaca Mesa. They are now closed, but their tasty recipe for Braised Short Ribs will live on forever. Enjoy this classic dish with any of the Zaca Mesa Syrah releases.


    • 1 ½ pounds of short ribs
    • 2 cups mirepiox (50% onions, 25% celery, 25% carrots)
    • 3 cloves garlic
    • 5 sprigs thyme
    • 2 bay leaves
    • 1 fresh rosemary sprig
    • 1 tbsp of peppercorn
    • 1 ½ cups of beef stock
    • 2 cups of beef stock 
    • 1 bottle of Z Three


    1. In large Dutch oven, sear the outside of the short ribs
    2. Then take the short ribs out, and set aside
    3. In a medium pan, add mirepiox, garlic, thyme, bay leaves, rosemary, and peppercorns
    4. Sauté the ingredients over high heat until onions translucent
    5. Deglaze with Guinness and pour the mixture over the ribs
    6. Add beef stock until the ribs are covered ¾ of the way up
    7. Cover the ribs and place in 325 degree oven
    8. Cook until the ribs can be pulled apart easily with a fork
    9. Remove and let stand until cool enough to eat  
    10. Pour a glass of Zaca Mesa Z Three and enjoy!
