Mac N Cheese

  • Mac N Cheese is a classic childhood dish. With just a few ingredients it comes together easily & it is easy to add your own twist to it. I prefer mine with bacon. I used Roussanne in my pairing but so many of our wines will pair perfectly with Mac N Cheese. Try our Chardonnay, Z Blanc, or even our Pinot Blanc.

    Serves 4 people


    • 8 oz uncooked elbow macaroni
    • 2 c shredded shard Cheddar cheese
    • 1/2 c grated Parmesan cheese (or use your favorite cheeses)
    • 3 c milk
    • 1/4 c & 2 tbsp butter
    • 2.5 tbsp AP flour
    • 1/2 bread crumbs
    • 1/2 lb of bacon
    • 1 tsp of lemon pepper
    • Preheat the oven to 400 degrees & boil a pot of water
    • Place bacon on baking sheet & sprinkle on lemon pepper. Cook for 10-12 mins. Drop the oven down to 350 degrees
    • Cook macaroni for ~10 mins or according to package directions. Drain
    • While your bacon & pasta cook, melt 1/4 c of butter in a saucepan over medium heat. Slowly stir in enough flour to make a roux. (Need to be constantly stirring)
    • Add mild to roux slowly, stirring constantly. Once well mixed add cheeses & cook over low heat until cheese is melted & sauce is thick. 
    • Once the macaroni is cooked & drained put in a large casserole dish & mix in cheese sauce,
    • melt the remaining butter in a skillet over medium heat. 
    • Add breadcrumbs & cook until toasted brown. 
    • Spread toasted breadcrumbs over the mac n cheese in the casserole dish. 
    • Bacon should be removed from oven by now, place casserole in the oven & bake for 30 mins.
    • Once the bacon is cool to the touch, crumble into small bits.
    • Remove casserole from oven top with bacon bits. 
    • Serve with a glass of Roussanne
