Steak & Brussels Sprouts

  • This rich recipe is reserved for special occasions such as a family member's visit or unique occasions. It also requires two cooks in the kitchen, one for the steaks & one for the Brussels Sprouts. The Z Three's complex flavors of red, blue, & black fruits, roasted herbs, and smoky oak tones are complimented with every bite of the steak & Brussels Sprouts. 



    • (4) 1 1/2 inch-thick New York strip steaks
    • 2 tbsp extra-virgin olive oil
    • Salt & pepper

    Brussels Sprouts

    • 4 strips thick-cut bacon
    • 2 tbsp butter
    • 1 lb brussels sprouts, halved
    • 1/2 onion, chopped
    • Salt & pepper


    1. At least 30 minutes before grilling, remove streaks from fridge. Season liberally with salt (no pepper yet). Let it sit, covered, at room temperature
    2. Heat oven to 400 degrees. Line baking sheet with foil & place bacon on sheet.
    3. Cook bacon for 12-15 mins until crispy. Remove to a paper towel-lined plate. 
    4. Heat grill to high. Brush the steaks on both sides with oil. 
    5. place steaks on the grill & cook until slightly charred (about 4-5 mins)
    6. Turn steaks over and continue to grill for 3-10 mins depending on preferred doneness
    7. Transfer steaks to cutting board, season with pepper, loosely cover with foil, & let it rest for 5 minutes before slicing.
    8. Over high heat, melt bacon fat & butter in pan.
    9. Add onions and Brussels Sprouts & cook, stirring occasionally, until sprouts are golden brown (8-10 mins)
    10. Season Brussel Sprouts with salt & pepper, to taste, and toss bacon into pan.
    11. Plate, pour your glass of Z Thee, & enjoy!
